♡ Almond cookies ♡

As it's half term and I have so much free time, I took the liberty this afternoon to do some baking! We didn't have any eggs in which was a disappointment as I was hoping to make cake of some sort, or cookies, but I happened to find a recipe which didn't require eggs at all! And that is almond cookies, a kind of shortbread biscuit which sounded very nice! 






RECIPE

Ingredients: 75g icing sugar, plus extra for dusting
250g plain flour
75g ground almonds
a good pinch of fine sea salt
125g butter, softened 


1) Sift icing sugar, flour into a bowl and stir in the ground almonds and salt. Add the butter and rub of it into the dry ingredients with your fingertips,it will take a good while but keep mixing the ingredients until it begins to form a dough! (Similar to a shortbread mixture)

2)Preheat the oven to 180c/Fan 160c/Gas 4. Line a large baking tray with baking paper. As soon as the dough starts to form, push it together to make a flattened ball and place between two sheets of baking paper, (It will be very crumbly, so you might need to press it together- be careful!) Press the dough down gently with a rolling pin until it is about 2cm thick. 

3)Use a cookie cutter whatever size, preferably round, and then put them onto the lined baking tray. Then bring the remaining mixture together and repeat the process until no mixture is left! 

4)Bake the biscuits for 12-15 minutes or until firm and starting to turn golden (they should look pale so don't brown too much)! 

Cool on the tray, then using a sieve dust the icing sugar on top! Voila! ^.^ ~ you can add your own toppings, I was close to sandwhiching too in nutella but I resisted;)
